Im going to see my husband!

Yes, I am going to see my husband. Finaly after the long wait. I havent seen him for quite awhile. suppose to meet him in japan, but i can't get the tickets. So i will be meeting him in Korea after my attachment. Sashimi, i've missed you so much. Everytime i step into the hospital i think of you. Soon my love, i will see you again.

P.S: smart people will understand my post, although its 90% crap. And im more excited bout the coming week, again only smart people will know.

Cupcakes!

Hello! This post is dedicated to my cupcake fans! haha

I'm sharing the recipe here with you people, do try it out at home if you can.

You will realise its so much fun making them with your loved ones.

This recipe is for the cupcakes my mom, Angelyn and I made for The Jeweler's shop production party.



For the cake you will need:

125g butter, softened.
2 teaspoons finely grated orange rind
110g caster sugar
2 eggs
150g self-raising flour
50g plain flour
40g almond meal
65g craisins
60ml orange juice
2 tablespoons milk
AND LOTS AND LOTS OF LOVE!

For the fondant you will need:

2 teaspoons gelatine
1 1/2 tablespoons water
2 teaspoons glucose syrup
240g icing sugar
80g extra icing sugar
food colouring

For the butter cream you need: (this is the reason why i made cupcakes ^-^)

90g butter, softened
1/4 teaspoon orange essence
110g icing sugar
1 tablespoon milk
food colouring


Procedure:

1. Make fondant. Set aside walnut-sized portion.

2.Dust surface with icing sugar, roll remaining to thickness of 3mm. Cut out 18 flowers using 3 cm cutter or 36 flowers with 2 cm cutter.

3. Divide the walnut-sized fondant into 3, colour each with a different colour. Roll tiny balls for flower centers. Brush flower centers with water to secure coloured balls.

4. Preheat oven to moderate (180 degrees Celsius or 160 if your oven is fan forced). Line muffin pan with paper cases.

5.Beat butter, rind, sugar and eggs with electric mixer until light and fluffy.

6.Stir in sifted flours, almond meal, crasins, juice and milk. Fill cupcake cases, smooth surface.

7.Bake large cakes for 35 mins, small cakes for 25 mins. leave on wire rack to cool.

8. Make butter cream.

9. Spread cakes with butter cream using a spatula, decorate with flowers.


Fondant

Sprinkle gelatine over water in a small bowl. Stand small bowl in simmering water, stirring until gelatine is dissolved. Add glucose. Place half the sifted icing sugar in a bowl. stir in gelatine mixture. Gradually stir in remaining sifted icing sugar. Knead on surface dusted with extra sifted icing sugar until smooth. Enclose in plastic wrap to prevent drying.

Butter cream

Beat butter and essence with electric mixer until light and fluffy. Beat in sifted icing sugar and milk. Mix colouring of your choice.

Glossary
orange rind- orange skin without fibre (the white part directly underneath the skin)
craisins-dried cranberries. Think raisins, only cranberries.
almond meal-grounded almond. Think grounded nuts, only almond.
gelatine-comes in powder form, a small bottle. ask the staff at phoon huat.
glucose syrup-glucose, sticky transparent liquid form. ask the staff at phoon huat, or u can get some from me.

Tips and hints
Ingredients are available in most supermarkets, for first timers i suggest go to phoon huat, there is one at sembawang mrt station. You can find everything there.

Soften butter does not mean melted butter, to ensure your butter doesn't melt, place your butter in a cool place. If the whether is warm, take out the butter 45 mins b4 making the cupcakes.

Bring out eggs and ensure that they are at room temperature when using them, it can affect the outcome of the batter.

Coat cutters and fingers with icing sugar when handling the fondant, its really sticky and can be really messy. When held too long in hands, the sugar in the fondant will start to melt and get sticky.

If you are not sure what kind of papercase to buy, stick to the safe colours like brown and white.
I like to use brown myself as there is a contrast in the topping and the base.

Sweet Love

Today she was discharged. I walked pass her bed, saw her daughter packing her things. Then i asked her in teochew, how are you feeling today? you are going home today right?
Both herself and her daughter shook their heads winking at me with one eye, denying going back today. I later found out from the daughter, keep the news from her father first.
Because they know that he will get anxious over little things concerning his spouse, and he will start fretting over her.

Their love is so simple yet strong.

Such sweet love.

What is Love?

Now that jeweler's shop is over it made me think about love even more.

I am pretty amazed by how our lives can be revolving around just that word, that simple meaning.

During my attachment there was this elderly couple, his wife was admitted into the hospital. It didnt stop them both from being away each other. Afraid that she would be lonely in the ward, he would come everyday, making his daughter send him from the nursing home to the hospital. He would come and sit next to his wife. Watch her brush her teeth, eat her meals and listen to her every word. Just having each other's company can make them so happy. How lucky they are to have each other.

I think this is what love is.
